i can't think of an occasion that does not call for pancakes, but they're a given on weekend mornings. i came across a recipe for the best buttermilk pancakes the other week, and am happy to report that they're simple, fluffy, and comforting…certainly the best i've ever made. my dad's pancakes will forever be my favorite, but it's true that these will do just fine.
